Acabado!

I am happy to write that I am officially done with classes at ICADE!! 7 months of business classes and exams in Spanish are over as of about 3 hours ago. I will be sad to not see all of my class friends every day, but I know we will still see each other. In fact, we are all going to Pacha tonight to celebrate. I’m excited to start work and do something new, an knowing I have 5 more months here makes me happy. It was a really unique and awesome experience having classes in another language this year, and I have sympathy for anyone who moves to another country without really knowing the language. Yesterday Kathryn, Colette, Gabby, Lauren and I had a picnic in the park (my favorite place mentioned here) while attempting to study for our last exams in the beautiful weather. We did not get much studying done, but as always we had a great time. Colette made blueberry scones using this recipe, I made these peanut butter chocolate chip shortbread cookies , and Gabby Lauren and Kathryn provided bread, cheese, meats and wine. As you can tell, I love picnics. It is just too tempting when it’s in the 70’s and we live near a great park. Caroline and Brian will be back tomorrow for the night, and we have lots of fun festivities planned for the weekend. Happy Friday to all of you!


Strawberry scones

I have been on a huge strawberry kick for the past month or so, mainly because they are so cheap here and taste amazing. I had forgotten how good fresh strawberries taste, compared to the ones they sell year round in the US that basically taste like water. These ones only arrived at the grocery store once it started getting warmer, and they smell and taste like when we would go strawberry picking with my Auntie Eileen when we were little. When Jenny was here I decided to attempt making strawberry scones because I was excited to use the American baking powder she brought. Baking here is very hit or miss because all of the ingredients are slightly different, so it is extra exciting when things turn out well. These were great, and unfortunately her and I ate the entire batch on the way to the Canary Islands before I could snap a picture. I made them again last week for my friends, and once again they were devoured. I then passed the recipe to Colette who made them this weekend, and is attempting them with blueberries tonight. The point is, this easy scone recipe is here to stay! If you have ever been turned off by the dryness of scones, these will cause you to reconsider because they are not dry at all, more like muffins inside. Enjoy!

Strawberry Scones adapted from this recipe

(makes 6 large scones or 12 minis)

1 cup strawberries
3 tablespoons granulated sugar
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
6 tablespoons or about 85 grams butter, slightly softened and cubed
2/3 cup half-and-half or cream or cold buttermilk ( I made my own buttermilk using this recipe)

Topping:
1 tablespoon sugar

Preheat oven to 400 degrees fahrenheit (about 200 Celsius) . Lightly grease a cookie sheet.

Cut strawberries into bite-sized pieces. Sprinkle fruit with 1/2 tablespoon sugar; set aside. Be sure to make the pieces small, or they tend to fall out of the dough.

Combine remaining sugar with flour, baking powder and salt. Add butter, using a pastry cutter or 2 knives to cut in butter (you may want to use your fingers to be sure butter is evenly mixed into flour). Stir in fruit; then add cream/half-and-half/buttermilk all at once. Use spatula to gently stir dough until it holds together. It will look like a mess and not stick together very well, but once it bakes it all comes together.

Turn onto a lightly floured surface and knead gently a few times to incorporate dry ingredients. Be gentle so you don’t break up the berries and don’t overwork the dough. Sprinkle dough with flour if it gets sticky.

Press (pat) the dough into a circle 3/4 inch thick. If any berries peek out, push them into dough. Cut circle into 6-8 wedges, then transfer wedges to the cookie sheet, leaving at least 1/2 inch of space between them. Bake 15 minutes.

Sprinkle with sugar and bake 5-10 more minutes or until the tops are beginning to brown and spring back when you push them. I think that I probably only cooked mine for around 17 minutes total because I didn’t want them too dry. I would recommend sharing these so that you don’t eat an entire batch in a day with your sister like I did, although they were very enjoyable!

 

Turismo

This past Friday just after I handed in my final economics paper, my cousin Caroline and her boyfriend Brian arrived to visit. I was so excited to see them, show them around the city and have more visitors! It was a beautiful day on Friday so we set off right away to see some major sights like The Royal Palace, Sol, Plaza de España, Mercado de San Miguel, etc. We had a great lunch before coming back and taking a nice siesta for a few hours. For dinner we went to El Tigre so they could experience the free tapas that come with  your drinks, and then met up with Gabby, Lauren, and Kathryn to go out. We had an awesome night going to a few different bars that I had never been to before, and then slept in on Saturday morning.

Saturday was another gorgeous day, so we met their friend Kimmy for pizza and ate outside. We walked all over the city and saw Retiro, had churros, and finally ended up at the Prado museum. I had never been to the Prado before, and while there were some cool paintings I wasn’t overly impressed. I think it would be cooler to have a tour of the museum because then you could hear the stories behind some of the art. Saturday night we went out for Mexican food with my friends, and then went to a bar near my apartment. The bar was packed because a Spanish actor was there, and Lauren was pretty excited to get her picture taken with him. Sunday morning Brian and Caroline left to spend the week in Sevilla and Barcelona, they come back Saturday for the night. It worked out well because this is actually my finals week, I have taken 2 so far and have 3 left! I can’t believe that after  this week I will be done with school here. Unfortunately I didn’t take any pictures when we were out this weekend, I left that up to the tourists I had with me. I did however get to skype with my Nana at her 87th birthday party, which is always fun. Technology is great. I miss family parties! I hope you all enjoyed the past weekend as much as I did. xoxo

Canary Islands

Does March seem to be flying by for everyone else too? I can’t believe there are only 10 days left. It was so fun having Jenny here in Madrid last week, and we were so excited to go to the Canary Islands on Thursday with some of my friends. The 11 of us rented a house in Las Palmas on Gran Canaria for 5 nights because we had Monday off for Father’s Day in Spain. We were all so ready for a beach weekend after this ridiculously busy mini semester at ICADE. I have said this before, but I am lucky enough to have some of my best friends in my abroad program. Because our International Business program is so planned out at Northeastern, we all had tons of classes we had to take before going abroad and hence we were in a lot of them together. Then the summer after our sophomore year we went to Sevilla for 5 weeks (also part of our program) to improve our Spanish and take 2 classes. We joke that up until Sevilla we were “awkward class friends” who would talk all class and then go our separate ways on the weekends, but after Sevilla we were all just best friends. Ever since then we have gone on a lot of trips together, to Portugal, Morocco, Ibiza and Valencia, Oktoberfest in Munich, Barcelona and finally the Canary Islands. Basically we act like a big ridiculous family and have the best time. It is always so fun making new friends abroad from all over the world, but sometimes there is just nothing like a great weekend with your American friends who have known you all along. This weekend was full of relaxing and hanging at the beach, making homemade dinners, and playing drinking games at the apartment. It was so fun having Jenny there with us and I had such a great week with her. I miss seeing my parents and sisters on a regular basis, we had a ton to catch up on and I am so glad she came. I can’t believe that I won’t see her for another 5 months!! I hope you all enjoyed your weekends as much as I did! xoxo

El tiempo de hoy

Hello readers,

I have a post written about this past weekend in the Canary Islands but I am awaiting some pictures from Jenny to accompany it since I left the photography up to her. In the meantime, here is a glimpse of the weird weather Madrid is experiencing this week. It was really hot in the high 70’s last week, and now it feels like it did in February. Just when I thought I had put my wool coat away for good! It hasn’t rained in Madrid in a few months, and it finally started last night. My Spanish roommate Raquel came and banged on my door to tell me, just like a little kid on a snow day! Although getting up for my 8 am finance test today wasn’t fun, I did take a nap after to the sound of the rain which was great. I never thought I would miss the rain! Also it is worth mentioning that people in Madrid treat light rain like a foot of snow in Boston; everyone is late for class (professors included) and so frazzled. It’s pretty hilarious. Hopefully since this rain eliminates any desire to go outside I can focus on finishing the 11 page economics paper I have to write. Also I am hoping the weather does a turn around before I have more visitors come this weekend! xoxo

Hermana en Madrid

After meeting Jenny at the airport, we came back to my apartment and slept until later in the afternoon. I was so excited to see her and it was so nice to catch up. She brought all kinds of awesome American products like bagels, peanut butter, face scrub, chapstick, baking soda and baking powder, and some of my clothes! In the afternoon we walked to Retiro, the huge park in Madrid to meet some BU kids she knows in Madrid. We had dinner at El Tigre so she could try some tapas, and then came back to shower and get ready. Some of the Germans from my class were having a party, so we met up with Gabby and some of the guys to go. It was really fun and nice to go somewhere close by and low-key! Mostly it is just fun having Jenny here with me. This week I have class, but I am going to do my best to show her everything. Thursday morning we leave for the Canary islands with 9 of my friends for 2 nights before she leaves on Sunday. I am so excited, just have to get through a final presentation and a finance test first. Hope you are all enjoying your week!

First visitors

Hello everyone!

This past week has been incredibly busy with school, work, and friends visiting! Last weekend Gabby’s Dad and brother were here, and we did had a great time showing them Madrid and hanging out. I even got to try Mr. Velasquez’s homemade vodka sauce, which was the best I have ever had. Friday night we went to the birthday party of one of the Irish girls in our class, and it was so fun. They had rented out a bar for her 21st and had food, pictures, cupcakes, and discount drinks. I mentioned this before, but it is so nice how the 80 students in our class here are really close and love going out together. At Northeastern I have had classes with people that I have never seen again after! After the birthday party some of us went to Pacha and stayed really late, but it was great. Saturday night a ton of Northeastern students were visiting for spring break, so we went to the 7 story nightclub Kapital. It is pretty overwhelming but we had a lot of fun.

This past Wednesday our friends Kevin and Kim came from Northeastern for a few days, so we showed them all over the city. Wednesday we took them to El Tigre, a great Spanish bar where you get free tapas with your drinks. Thursday we had a sunset picnic at my favorite site, the Templo de Debod, then went to Pacha again! Friday we walked all over the city and saw the Royal Palace, had lunch, went to the Mercado de San Miguel and the Plaza de Santa Ana, Sol, and Gran Via. I am getting the city tour down to a science! I will post my favorite version of it eventually. Friday night we went to a gay club with some of our friends, which was definitely an interesting experience but we had fun. Once we all left the club around 4:30 am, Gabby and I went and got kebabs and then I got on the metro to meet my sister Jenny at the airport. Kevin and Kim left yesterday morning to go back to London then Boston. Thanks for coming guys! It is always so fun having visitors here, and it makes me appreciate where I live even more.
